I'm really enjoying this vegan challenge so much that I might extend it to 90 days...we'll see.
Smoothies have been my go to. I have organic vanilla protein powder that is awesome! This morning I had a blackberry bannana smootie with chia seeds, greens and almond milk. Yummy!
I oven roasted veggies over the weekend and added roasted peppers, potatoes and salsa to my quinoa! It was a great lunch with my asian salad with almonds. So far, so good and I've lost 4 pounds!
