The lab-grown meat industry is struggling, but some companies are getting creative to survive. Vow, an Australian company, has taken an unconventional approach by creating exotic products like Japanese quail foie gras and even woolly mammoth meatballs. Their Chief Technology Officer, Ines Lizaur, who previously worked at SpaceX and BMW, is applying lessons from aerospace to food production in their Sydney facility that resembles a rocket factory. Creating cultivated meat involves growing cells in stainless steel tanks that replicate an animal's body conditions. Vow's "forged gras" takes 79 days to produce and sells for $12-32 per ounce in Singapore. The company claims to have the world's largest food-grade cell culture reactor at 20,000 liters, capable of producing over 2,000 pounds of meat. However, scaling up to compete with conventional meat remains challenging for most companies in the sector.
